Abstract

Nowadays, Coffee shop business has become an emerging market over the world and in Sultanate of Oman. This project was conducted to study and analyze the factors of designing a successful coffee shop from industrial engineering perspective by using related tools and methods. A deep study in literature was performed to find the appropriate industrial and scientific tools that can be used in designing coffee shop. Many aspects and issues were discussed related to food service industry, in general, and coffee shops business in particular. In addition, a number of data collection tools such as interviews and questionnaires were conducted to understand the customer’s needs and market analysis. The targeted area for coffee shop is in Muscat Government, because it acquires most population. Other factors that are important to choose the location of the coffee shop such as rent, number of competitors, pedestrian volume, parking capacity, public facilities, accessibility and store area. The objective of the first factor is to be minimized whereas the rest factors are maximized. These factors were used as inputs to AHP method. This method shows that Alkhoud is a suitable place for our coffee shop.
